Using Shredded Coconut (& A Giveaway from Tropical Traditions)

See these? These are really good. I mean really good.
They are your traditional Magic Bars, also known as Seven Layer Bars, but with a twist. I used Oreo cookie crumbs instead of graham crackers for the crust. They were absolutely amazing.

Another twist was that instead of your grocery store variety, sweetened coconut flakes, I used shredded, unsweetened coconut from Tropical Traditions. While the bits are a little tinier than the flaked coconut I’ve bought in the past, this product blended really well into the Double Chocolate Magic Bars.

And since the coconut was unsweetened, I felt a little bit better about eating half the pan. I mean, certainly, that was less sugar than the other way, right?

I’ve had the opportunity to sample a number of coconut products from Tropical Traditions and I’ve been really pleased. I love the way these ingredients work into my recipes. And if you’re looking for coconut recipes, check out their recipe database for inspiration.

  16. I’d love to win. The most frequent way I use coconut is in smoothies. I like to make a tropical smoothie with yogurt, coconut, pineapple and orange juice.

  53. I made a different take on the magic cookie bars that I got on the blogsphere. I t had the traditional graham cracker crust, sweetened condensed milk and coconut (I used the same kind you did and loved it) and then topped it with dried cranberries and white chocolate chips. Yummo! Everyone we gave them to said that was their favorite out of all the baking.

    My favorite coconut recipe is the magic bars you posted (I’ve always used the graham crackers but the crushed oreos sounds yummy!) but I think coconut is also really good in plain oatmeal cookies, too. Adds a touch of something else to the yummy goodness of oatmeal cookies!

  93. I actually love to make homemade coconut milk from shredded coconut. My son has to drink it instead of cow’s milk, and it is good!

  94. My favorite coconut recipe is for Chewy Coconut Cookies (From this blogger:

    1 1/4 c flour
    1/2 tsp baking soda
    1/4 tsp salt
    1/2 c butter
    1/2 c brown sugar
    1/2 c sugar
    1 egg
    1 1/3 c flake coconut
    1/2 tsp vanilla

    In medium bowl combine flour, baking soda and salt, set aside

    Cream butter, add sugar gradually (beating thoroughly). Beat in egg. Add flour mixture gradually. Mix until just blended, then mix in coconut and vanilla.

    Drop onto ungreased cookie sheet and bake at 375 for 9-10 minutes or until cookies begin to brown slightly.

    My favorite way to use coconut is in homemade granola. I put oatmeal, coconut, sunflower seeds, any nuts I happen to have, coconut oil and honey together. I bake it in a slow oven until it gets a little brown. It is so yummy!

    I have TWO favorite recipes with coconut. The first is my homemade pumpkin coconut granola with cranberries and pepitas. SOOOOO delicious! The second is a coconut curry African lamb stew. Life changing!
