Peppermint Brownie Bites

One of the attractions of a variety of Christmas Cookies is that you don’t have to lock yourself into one particular flavor. You can vary the tastes and textures, so that you never get bored.

As if one could get bored of cookies, but still….

Last in our Cookie Lineup are the Peppermint Brownie Bites. These were super simple to make since I had a bag of Cocoa Brownie mix waiting for me in the freezer. I just mixed it up the Cocoa Brownie mix with the wet team, spooned the batter into mini muffin cups and then let my minions sprinkle on Andes Peppermint Crunch baking chips (available at Walmart).

Bake this smaller size for 15 to 20 minutes or until a tester comes out with a few crumbs attached.

Once they were baked and cooled, I layered them between sheets of waxed paper in an airtight container and stashed them in the freezer. Now we’re ready for a minty cool snack anytime.

Fun gift idea! Fill a gift bag with a couple bags of Cocoa Brownie Mix, a bag of Andes Peppermint Crunch baking chips, and a package of mini muffin papers. Don’t forget to mark the necessary “wet team” on and to include baking instructions on the bag of mix.

  2. Oh, my goodness! You are teaching me to actually cook! This is the easiest thing I have ever done! Had all the ingredients in the pantry so I tried the Brownie mix – it took me 20 minutes. I now have 6 bags of brownie mix in the pantry. Well, 5 now because I tried one right away and 20 minues later had 18 bite-sized brownies that looked just like the ones I buy at Sam’s. Except these are soft and fresh! Thank you so, so much!
