What’s on My Plate?

As I mentioned yesterday, we’re exploring the world of new and strange vegetables. The first one up was Swiss Chard. It seemed like it would go over best as a side dish, so I experimented with Sauteed Chard.

I also dug through the freezer and found several fillets of wild Alaska salmon. We used the Cook-It-Frozen technique and grilled them. I made brown rice pilaf with onions and butter and warmed some frozen corn for side dishes. And for added color, I threw in some grape tomatoes.

The chard was fairly bitter, so it was nice to counterbalance that with the sweetness of the grapes and corn. Talk about your pretty plates!

  4. This week I shared my gnocchi recipe. It was the first time I have ever made it. I was nervous, would they turn out rock hard? Even with the heat and humidity from two weeks ago, they still turned out soft and pillowy. I paired it up with pork chops.

  7. YUM – Salmon is one of the only seafood I’ve really enjoyed consistently over the last few years. Way to go trying out all the different swiss chard recipes!
    I posted a link on winter squash, because we’ve been filling up on it ever since it went on sale at the store. Sooo yummy, especially with all the different ways to serve it. (butter and cinnamon? yes please)
