I love to have a filling breakfast to keep me going through the morning. Potatoes and eggs are just the ticket, especially if you combine them in a Loaded Breakfast Potato.

I love to top a baked potato with scrambled eggs, grated cheddar, sour cream, and salsa. You can add pretty much any toppings you want. Perfect for brunch or an easy breakfast bar for company.

In my neck of the woods, I’ve been able to buy ten pound bags of potatoes for $0.99 – $1.50. Top those with an eighteen pack of eggs for about $2.00, cheese for $2.00/pound, and sour cream for $0.99/16 ounces and it proves to be a very inexpensive breakfast. I could feed an army for less than 6 bucks!
