Love the flavor of coconut? Looking for an easy way to incorporate it into your diet?

Once maligned, the coconut is seeing new popularity as people investigate its health benefits and explore its flavor profile.

Earlier in the year I had a chance to review coconut oil from Tropical Traditions. Our whole family really enjoyed the taste of the things I baked with it.

A few months ago I received a bottle of coconut cream concentrate to try. Dissolve the concentrate in water and you have coconut milk! What a fun product!

Coconut Cream Concentrate is certified organic whole coconut meat in concentrated form. It contains no additives (not even water). The dried coconut meat is ground into a very fine powder, giving it a creamy consistency due to its high fat content. Since it is 70% fat, it is a rich source of pure coconut oil. Note: this is a food, not a cooking oil.

It’s a little tricky since coconut products solidify at a certain temperature, but you can watch a video to learn how to reincorporate all the coconut oil and cream.

There are endless ways to use this concentrate: as a beverage or in cooking and baking. I’ve played around with it in my Coconut Lime Muffins and my Coconut Banana Bread. Tropical Traditions also offers a wide range of recipes.

This weekend I have a jar of Coconut Cream Concentrate from Tropical Traditions to giveaway.
