A Guest Post from Myra of My Blessed Life

Do those two words together scare you? Tomato pie? Really?

Never fear! Tomato Pie is amazing! You will be addicted after the first bite. Our family loves this dish especially in the spring and summer when fresh tomatoes are at their prime. Vine ripened tomatoes are so much tastier than the grainy “force” ripened tomatoes found during winter months.

Tomato Pie
3-4 tomatoes, sliced
1 teaspoon dried basil (I like to use snipped fresh basil.)
6-8 strips turkey bacon, cooked and crumbled
3/4 cup grated Parmesan cheese
3/4 cup olive oil mayonnaise
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
Salt and Pepper to taste
9″ pie crust
1 tube Ritz crackers
1/4 cup butter, melted

Alternate layers of tomato slices, bacon pieces, basil, salt and pepper in pie crust.

Mix mayonnaise and cheese and spread on top layer of tomatoes. Crumble crackers and cover pie. Pour melted butter over crackers.

Bake at 350 degrees for 30 minutes.

Enjoy! Try not to eat the entire pie all by yourself. Ha! Now, go find some tomatoes and make a yummy pie!

Myra, this sounds so good! I've never heard of tomato pie before, but now I have to give this one a try (and love that it includes 3 of my favorite things – basil, tomatoes, and bacon!)

I made it this weekend. It came out exactly like in your picture and was very delicious. A little salty for my taste, I would cut down the salt and with the parmesan I think would be salty enough.
