Coconut Berry Salad Recipe

Berry season has arrived here in California. Last week the kids and I joined some friends for our annual strawberry picking adventure. While the berries aren’t cheap, they’re “almost organic” — and we’re allowed to eat all we want in the field. Good thing, since they’re a pretty penny.

They’re also better than anything I can usually find at the grocery store. Last year, we picked a lot and I had a great time experimenting with strawberries in recipes. (You can find some of those recipes here.)

This week all I’ve been able to think about was this Coconut Berry Salad that my friend Alison made for a Bible study luncheon recently. I had spied the tray of clear plastic cups full of berries and coconut and wasn’t expecting much more than, well, berries and coconut.

I took a bite and was amazed! What a great flavor combination! Alison is always bringing something amazingly delicious to our Bible study luncheons. I intend to recreate her vegetable pesto sandwich soon. Anyway….

Alison’s version of this salad included fresh raspberries, strawberries, and blueberries as well as sweetened coconut shreds, candied pecans, and a little agave. We also had brownies on the side which were delicious crumbled into the salad.

Since I know so many Good Cheap Eaters are trying to avoid sugar for a variety of reasons, I decided to make the skinnier version of Alison’s Coconut Berry Salad. And guess what?! It’s still just as delicious without the added sweeteners!

So, go whichever direction you like, based on what’s on sale and what you have on hand. Just be sure to load up on lots of fresh berries while they’re in season. This Coconut Berry Salad is the perfect excuse to indulge!

  3. I make a similar fruit salad that is simply fresh pineapple and shredded coconut. It is even better the second day. Basically it is a pina colada salad ?
