Breakfast for Supper

We are entering into the home stretch. In case you hadn’t heard my little secret, I have another cookbook in the works. It’s due on the first. This means the next 10 days will be crazy, crazy, crazy. I’m making it easy on myself this month by planning all the meals in advance. I had to make a few tweaks, based on meals we missed earlier in the week and what we actually have on hand.

I also did a ton of grocery shopping with convenience in mind.

Here’s the meal plan for the week:

Beans and RiceBeans and Rice

    There is my menu of the week. I want to try a new dessert today if my beans cook fast enough in the slow cooker. I only have so much counter space!

  3. I just mapped out our menu. Our week is full of standardized testing at work, which makes for stressful days, which means we need comfort food when we get home! I’m also working to purchase more local, grass-fed meat, as well as organic when I can. Our freezer’s nearly empty so I feel like I’m literally starting our menu from scratch! :)
    Chicken, potatoes & green beans
    Tacos
    Leftover chicken w/pasta
    Breakfast for Dinner
    Sandwiches for Supper
    Roast with mashed potatoes and broccoli
    and that’s a wrap! (Saturday is open…)

    Eeeekk! There is a new cookbook in the works? I’m so excited! I use your first one all the time. Since the student loans are paid off now, I can pre-buy this time! Woo hoo! Can’t wait!
