We are trying this tonight and doing sandwiches or on shredded lettuce(no leaves). We bought the rotisserie chicken from Sam’s and this will be meal 3 &4. Serving it with soup made with some chicken and leftover veggies! 🙂

I also add a dash of tarragon to my chicken salad sandwiches. I find it adds such a nice flavour to the chicken and goes well with the apple. 🙂

I make this mayonnaise: http://goodcheapeats.com/2013/04/homemade-mayonnaise/ It looks like they are loosening up a bit on the vegetable oil rule, but you can make it with all light olive oil if you want to be a stickler for the rules.

I agree with Joshua. So many people say they feel sorry for me and my family and that they wouldn’t be able to “deprive” themselves and their kids. If being healthier than we’ve ever been and eating delicious food every day is considered “deprived”, then I certainly love it! My husband loves every single meal I feed him and a lot of recipes come from your blog and cookbook, so thank you!!
It really is true that if you focus on what you can have, it can be very tasty.

This certainly proves that you don’t have to give up eating good food when you go on a diet. I don’t really understand why some people think they have to stick to bland foods when trying to lose weight. Thanks for sharing this.
