Wrapping It Up in Summertime (What’s On Your Plate?)

On these long, hot summer days in Kansas, we’ve taken to eating lots of lighter, cooler meals. Any fast fare is likely to be a hit with my crew as long as it’s wrapped in a tortilla!

Today’s concoction was horseradish mustard, shredded monterey jack cheese, and mesquite turkey. Spread, sprinkle, layer, heat, and roll!

Other fast-fixin’ tortilla wraps we enjoy:

Lunch is best served with lots of fresh fruits and veggies, especially during the summer when they’re at their peak and often on sale or in the garden. I opted for red pepper strips and pita chips with hummus, while my family dug into a couple pounds of fresh strawberries. I had salads dished up for everyone before realizing we were out of ranch dressing. Whoops! We’ll put those back on the table tomorrow.

  3. I shared my lasagna roll ups recipe. I’ve had this sitting around for more than a year. I finally got around to making them. Turned out pretty good.

  4. We love wraps too — although we don’t make them as often as we should! I don’t know why, but they’re not the first thing I think of when we have homemade tortillas around. Guess I love quesadillas too much ;-) Thanks for the recipe inspiration.

  5. I LOVE wraps in the summertime. Another seasonal favorite is paninis. My mom makes them when we visit: lots of meat, cheese, and seasonal veggies pressed between crusty bread and grilled. Sooooo delicious, and the house stays cool!
