What’s on Katie’s Plate?

My husband still mourns the loss of his breakfast cereals, but only when I don’t plan breakfast well and leave him wishing. (There was a time, frugal friends, when I had upwards of 40 boxes of cereal in the basement for a family of two and a half.) Since going “ real food,” we’ ve cut that out nearly 100%. We eat a lot of oatmeal, eggs, and granola.

I like to pair eggs with spinach – each is a nutritional powerhouse on its own, but they actually work in a symbiotic relationship, each making the other even better for us! I utilize a crazy 11-step method to get the best scrambled eggs ever on the table as quickly and deliciously as possible. Most people never guess the secret fluffy egg ingredient (no, it’ s not the green stuff).

I also love having an easy grab-and-go breakfast option on hand, which often gets grabbed along with the eggs anyway. My healthy pumpkin muffins never last long! Stocked with the flavor of fall, they are SO moist and easy on the palate. You never feel like you have to warm one up to enjoy it. I make the muffins (or bread) with all whole wheat flour, healthy fats, and a heavy hand on the spices.
