What’s on Katie’s Plate?
I threw this “chili” together on one of those days where I badly needed to go grocery shopping but there was no possible way to do it. It seemed as if there was nothing in the house to eat, when in reality there just wasn’t anything to make the meals I had planned on for the week. Thank goodness for a well stocked pantry and some random vegetables. I normally keep onion and carrot on hand. I had one stray sweet potato leftover from sweet potato fries and a slew of poblano peppers because I didn’t specify how many I needed on the grocery list I gave my husband and he decided that 5 was the magic number. This recipe is full of flavors and somehow I managed to bring them all together. I was really happy with the addition of the sweet potato, which I decided to add at the last minute. Some of our most favorite, new recipes have come from such scenarios. I guess it’s safe to say that necessity breeds creativity!
